Apple Pie

One of the best things about December is definitely all the baking. The entire house smells of delicious cookies, Christmas cakes and definitely loads of pies. Apple Pie has always been my favorite pie. And I can say the best pie I’ve ever had is made by my friend’s mum and the taste still lingers.

There is something extremely warm and nostalgic about this apple pie- a true classic. The pastry is flakey and the sweet cinnamony apples with a slight tang from the lemon is like a hug in this cold weather.

Let’s dive in.

Ingredients:

For the crust:

1 1/2 cup + 2 tbsp of plain flour (roughly 220 g)

1 tbsp of icing sugar

1 pinch of salt

100 g cold butter, cubed (take the butter out just before adding it)

4-5 tsps of ice cold water.

For the filling:

3 apples; chopped

2 tsps cornflour

2-3 tbsp brown sugar

1 tsp cinnamon powder

1/2 tsp vanilla extract

Procedure:

Put flour, sugar and icing sugar in a bowl and mix. Add your butter and rub it in the flour. the big cubes of butter will gradually become smaller pieces.  The flour will change color and will resemble breadcrumbs .Gradually add the water a teaspoon first and then more as needed.  DO NOT OVER MIX. Form a dough and wrap in cling wrap. Chill in the fridge for at least 45 minutes.

In a large bowl, mix chopped apples with cornstarch, brown sugar,cinnamon and vanilla. Mix well together. The cornstarch thickens the juices that are released from the apples.

Preheat your oven to 180C

Roll out your dough and lay on your tin. Keep the remaining for the other layer. Transfer the apple mixture to the prepared tin. Get creative and cover the pie as you wish.

Bake in the oven for 50-55 minutes or until the crust is slightly golden.
